H\u00f6sten 2017 k\u00e4nde jag av v\u00e4ldigt mycket symtom av min histaminintolerans (som blev v\u00e4rre efter en sommar med mycket pollen).<\/strong> Jag best\u00e4mde mig f\u00f6r att testa att \u00e4ta AIP<\/strong> (autoimmun paleo-kost) i kombination med l\u00e5g-histaminkost<\/strong> en m\u00e5nad f\u00f6r att se om besv\u00e4ren f\u00f6rsvann. Eftersom denna kost blev v\u00e4ldigt restriktiv var den ocks\u00e5 bara h\u00e5llbar f\u00f6r mig (i mitt liv just d\u00e5) i just en m\u00e5nad, men f\u00f6rutom att jag m\u00e5dde b\u00e4ttre (mer av l\u00e5g-histaminkost \u00e4n av AIP kanske) s\u00e5 utmanades jag i k\u00f6ket och fick t\u00e4nka i nya banor = alltid inspirerande!<\/p>\n

Denna rotfruktsbolognese<\/strong> \u00e4r ett av recepten jag tagit med mig fr\u00e5n den tiden, och som allts\u00e5 \u00e4r b\u00e5de AIP och relativt histamin-fattig. I AIP utesluter man bl.a. tomat, n\u00e5got som vi ju oftast anv\u00e4nder n\u00e4r vi lagar k\u00f6ttf\u00e4rss\u00e5s. Jag hade redan haft morot i k\u00f6ttf\u00e4rss\u00e5sen innan, s\u00e5 n\u00e4r jag s\u00e5g ett AIP-recept med r\u00f6dbeta i k\u00e4ndes steget inte s\u00e5 l\u00e5ng. Sedan dess har vi lyckats skapa ett recept som \u00e4r MINST lika gott som klassisk bolognese, i mitt tycke!<\/p>\n

S\u00e5h\u00e4r: Hur on\u00f6dig den d\u00e4r zucchinin eller de tv\u00e5 r\u00f6dbetorna k\u00e4nns i det h\u00e4r receptet \u2013 skippa dem inte!<\/strong> De \u00e4r n\u00e4mligen de som g\u00f6r den h\u00e4r bolognesen s\u00e5 smakrik, som ger den en djup, fyllig smak, \u00e4ven utan tomat (eller starka kryddor, som ocks\u00e5 utesluts ur AIP). (Och ja, i min v\u00e4rld f\u00e5r man kalla n\u00e5got en bolognese \u00e4ven<\/em> om det inte \u00e4r s\u00e5 likt originalreceptet\u2026)<\/p>\n

Trots att det \u00e4r rotfrukter i s\u00e5 sprids det ut p\u00e5 m\u00e5nga portioner, allts\u00e5 blir denna r\u00e4tten \u00e4nd\u00e5 r\u00e4tt \u201dlow carb\u201d<\/strong>. S\u00e5 om ni liksom jag f\u00f6redrar lite mer kolhydrater \u00e4n s\u00e5 rekommenderar jag att \u00e4ta ihop med t.ex. ugnsrostad butternutpumpa<\/a>\u00a0(och i s\u00e5 fall anv\u00e4nda fr\u00f6na f\u00f6r att kunna toppa r\u00e4tten med lite olivoljerostade pumpafr\u00f6n<\/a>!), eller kanske stekta morotsnudlar<\/a>.\u00a0Zoodles<\/a>\u00a0(zucchininudlar) \u00e4r \u00e4ven det alltid ett givet tillbeh\u00f6r f\u00f6r mig vid bolognese-\u00e4tande, men you do you!<\/strong><\/p>\n
